First Filipina Gathering in Michigan



   It was the first Filipina gathering that me and my husband attended yesterday. We were both excited, Me about meeting Pinays who live here in Michigan and the chance to speak my native tongue again. Hehehe! And for Hubby, the excitement of being able to taste new and different pinoy recipes.


   We got there early, but I really wanted to because I was still going to fry the food I was bringing. I met the hostess, Rhea. She was so nice and very attentive to her guests. Then I met other Pinay friends for the first time. We were being goofy the whole time. We talked like we have known each other for decades. I'm glad I met wonderful people yesterday.


   I can't wait for the next gathering. Event like this reduces my homesickness.

Lumpiang Shanghai (Pork Spring Rolls)


This is my version of this famous Filipino recipe. So I hope you like it!

Lumpiang Shanghai (Pork Spring Rolls) :


Ingredients:
  • 2 lbs ground pork
  • 1/2 cup green onions (optional)
  • 1 cup carrots, chopped or grated
  • 1 cup onion
  • few cloves of garlic, chopped
  • 2 tsp soy sauce
  • 1 raw egg
  • 1 tsp salt
  • 2 tsp ground black pepper
  • Lumpia wrapper (Spring roll wrapper)
Cooking Procedure:
Mix all the ingredients, except the wrappers, to make the filling. Adjust seasonings according to taste. If the filling tastes right, make the spring rolls by wrapping the meat using the lumpia wrapper. Fry the wrapped meat making sure that all the sides are cooked right. . Serve at once with sweet-sour sauce or sweet-chili sauce.

Me, shooting again!




Last weekend, we went shooting again with hubby and my stepson Alex. I was so excited because that time I already printed out some targets I can shoot on. I was able to shoot using the Glock 9mm, AK47 and the AK22. AK47 was so loud it got me scared though. Haha! Anyways, here are two videos that they took.





Oh by the way, I ended up shooting all the soil, like tilling the soil for gardening. Lol!

Strawberry Cake Roll



I made this Strawberry Cake Roll today after I was craving for some dessert right after lunch.  This is a budget-friendly and easy to make recipe. 


Ingredients:
3 medium eggs
2/3 cup (85g) caster sugar (I used finely granulated sugar)
2 drops vanilla extract (optional)
2/3 cup (85g) self-rising flour, well-sifted
1/3 cup strawberry jam
and additional sugar for rolling


1. Grease a standard size baking tray with butter.Place a non-stick baking parchment paper on it and press on all the four sides.
2. Preheat the oven to 350F.
3. Whisk the eggs, sugar and vanilla until very light and fluffy.
4. Mix the flour slowly with the spoon.
5. Bake it for 12-15 mins until golden brown and fluffy and springy to touch.
6. Sprinkle powdered sugar on another parchment paper and put the hot cake on it.
7. Spread jam on it when it is hot and roll with the help of paper.
8. Allow it to cool for 1/2 an hour. 
9.Sprinkle icing sugar/sugar, cut into slices and serve.

First Time in Lansing







We attended a baby shower last Saturday at Potterville. On the way there, I took some pictures but since the car is running too fast I was only able to get few good shots. I met new faces and was introduce to hubby's relatives, mother side. After the party, we visited Dad (hubby's dad) at the hospital. He was happy to see us. We spend an hour or two then we headed to see the State Capitol. Hubby said he was never been there for quite some time now. I kept on asking him if we are not lost. It was getting late already so the plan to park and walk the city did not push through. He promise to bring me there again. I hope he won't forget.

Passing the Written Driving Test

Yay! I made it! I passed the Permit Test in one take. It consisted of 30 items multiple choice and 10 items road signs. I am only allowed to make more than 10 mistakes, I made 8. After checking the paper, the lady asked me to read the items where I made the mistakes. Most of it were the first choices that made me change my mind and chose the other answer. I guess I have to rely more on my instincts. Hehe!
Anyway, In return I made a pointers to help others who are also first time drivers like me. Good luck! I will come back with my experience as soon after I hopefully pass the ROAD TEST...
